  • Carmarthenshire Cheese Company
      Carmarthenshire Cheese Company : (close)

Following 25 years of senior experience in the UK dairy industry, co-owners Steve and Sian Elin Peace returned to Sian’s native Carmarthenshire. After working to support a range of new and established food and dairy companies in England and Wales it soon became apparent that there was a gap in the market for a soft, speciality cheese business in Wales.

Dedicating many hours and hard work to create a state of the art manufacturing facility, the Carmarthenshire Cheese Company began in 2006 with Welsh milk being processed for trial batches just 15 days after the doors opened.

Pont Gar branded soft cheese range is the latest development in the recent revival of Welsh cheesemaking and marks a first for soft cheese development in Wales.

In Welsh (and French!), 'Pont' means bridge and Gâr derives from Sir Gâr, Welsh for Carmarthenshire. Gâr is also linked to the Welsh word for love (caru).

  • Quenby Hall Stilton
      Quenby Hall Stilton: (close)

    The Origin of Stilton

Cheese was made at Quenby Hall as far back as Saxon times. In the 17th Century a pressed blue cheese, the precursor of the cheese we now know as Stilton, was made at the hall which had been newly rebuilt in the fashionable Jacobean style. In the mid 18th century Shuckburgh Ashby, the owner of Quenby, went into partnership with Cooper Thornhill and made a soft blue cheese, this was sold at the inn in the village of Stilton on the Great North Road. This cheese became known by the public as Stilton.

Freddie de Lisle, the current owner of Quenby, has re-started the production of ‘The King of English Cheeses’ at the birthplace of true Stilton. Quenby Stilton is handmade in the traditional manner using milk from local Leicestershire village herds which is then matured for twelve weeks.
